Crock Pot Marry Me Chicken features tender chicken breasts in a creamy, sun-dried tomato sauce with garlic, Parmesan, and herbs. Easy, indulgent, and perfect over pasta, rice, or mashed potatoes.

4 boneless, skinless chicken breasts
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream or half-and-half
1/2 cup chicken broth
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
Fresh parsley, chopped, for garnish
Cooked pasta, rice, or mashed potatoes, for serving

Instructions

  • Pat chicken dry and season with salt, pepper, and Italian seasoning.

  • Optional: sear chicken in olive oil 2–3 minutes per side.

  • Place chicken in slow cooker and top with sun-dried tomatoes.

  • Whisk together cream, broth, garlic, onion powder, Parmesan, and red pepper flakes; pour over chicken.

  • Cook on low 4–5 hours or high 2–3 hours until chicken is cooked through.

  • Stir gently 15 minutes before serving to thicken sauce.

  • Garnish with parsley and serve over pasta, rice, or mashed potatoes.

Notes

Use chicken thighs for juicier meat; half-and-half for lighter sauce; add vegetables for extra nutrition.
