12 ounces pasta (fettuccine, linguine, or spaghetti)
2 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream or half-and-half
1/2 cup grated parmesan cheese
Zest of 1 lemon
Juice of 1 lemon
1/4 teaspoon crushed red pepper flakes (optional)
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
1/2 teaspoon lemon zest for garnish (optional)
1/4 cup reserved pasta water
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/4 cup pasta water and drain.
Heat butter and olive oil in a skillet over medium heat. Sauté garlic 1–2 minutes until fragrant.
Reduce heat to low. Stir in heavy cream and parmesan until smooth.
Add lemon juice, zest, and red pepper flakes. Simmer 1–2 minutes. Season with salt and pepper.
Add pasta and toss to coat, adding reserved pasta water if needed.
Sprinkle parsley and garnish with lemon zest or parmesan.
