These no-bake Key Lime Truffles are creamy, tangy bites of sunshine made with white chocolate, cream cheese, and key lime juice. Easy, elegant, and full of flavor!
2½ cups white chocolate chips (high-quality)
8 oz cream cheese, softened
¼ cup key lime juice
1 tbsp lime zest
½ cup graham cracker crumbs (optional)
2–3 tbsp powdered sugar (if needed)
For Coating:
8 oz white chocolate or candy melts
Extra lime zest or graham cracker crumbs for garnish
Melt white chocolate until smooth.
Beat cream cheese until smooth. Add lime juice and zest.
Mix in melted chocolate and optional graham crumbs.
Chill 2–3 hours until firm.
Scoop and roll into balls. Freeze 30 mins.
Dip in melted white chocolate or roll in graham crumbs.
Chill until set. Serve cold.
Use key lime juice for best flavor.
Store chilled up to 5 days, or freeze for 2 months.
