These no-bake Key Lime Truffles are creamy, tangy bites of sunshine made with white chocolate, cream cheese, and key lime juice. Easy, elegant, and full of flavor!

Ingredients

  • 2½ cups white chocolate chips (high-quality)

  • 8 oz cream cheese, softened

  • ¼ cup key lime juice

  • 1 tbsp lime zest

  • ½ cup graham cracker crumbs (optional)

  • 23 tbsp powdered sugar (if needed)

For Coating:

  • 8 oz white chocolate or candy melts

  • Extra lime zest or graham cracker crumbs for garnish

Instructions

  • Melt white chocolate until smooth.

  • Beat cream cheese until smooth. Add lime juice and zest.

  • Mix in melted chocolate and optional graham crumbs.

  • Chill 2–3 hours until firm.

  • Scoop and roll into balls. Freeze 30 mins.

  • Dip in melted white chocolate or roll in graham crumbs.

  • Chill until set. Serve cold.

  • Use key lime juice for best flavor.

  • Store chilled up to 5 days, or freeze for 2 months.
