Crockpot Parmesan Roasted Potatoes are tender, cheesy potatoes slow-cooked with garlic and herbs, perfect for Christmas or Thanksgiving.

Ingredients

2 pounds Yukon Gold potatoes, cut into 1-inch chunks
1/4 cup olive oil or melted butter
1/2 cup grated Parmesan cheese
4 cloves garlic, minced
1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)
1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder (optional)
1/4 teaspoon smoked paprika (optional)
2 tablespoons chopped fresh parsley, for garnish

Instructions

  • Wash and cut potatoes into 1-inch chunks; parboil 5 minutes if desired. Drain.
  • Mix olive oil or butter with garlic, Parmesan, rosemary, thyme, salt, pepper, onion powder, and smoked paprika.
  • Toss potatoes in the mixture until coated.
  • Place potatoes in a greased 6-quart crockpot.
  • Cook on low 3–4 hours or high 1 1/2–2 hours until tender.
  • Stir gently, sprinkle extra Parmesan if desired.
  • Garnish with parsley and serve warm.

Notes

Can be prepared a day ahead. Broil for crispier edges. Vegan options available with plant-based butter and Parmesan.
