2 large cucumbers, thinly sliced
1 cup plain Greek yogurt
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon honey or maple syrup (optional)
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 small clove garlic, minced
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
Optional: 1/4 cup thinly sliced radishes or cherry tomatoes
Optional: 1 tablespoon toasted sunflower seeds or almonds

Instructions

  • Slice cucumbers thinly.

  • Whisk Greek yogurt, olive oil, lemon juice, honey, garlic, salt, and pepper.

  • Stir in fresh herbs.

  • Toss cucumber slices with dressing gently.

  • Optional: fold in radishes or cherry tomatoes.

  • Optional: sprinkle toasted seeds or almonds.
