Blueberry Cream Cheese Bars are rich, creamy, and bursting with sweet-tart blueberry flavor. With a buttery shortbread crust and smooth cheesecake filling, they’re the perfect easy dessert for any occasion.
Crust:
1 cup (2 sticks) unsalted butter, softened
½ cup sugar
2 cups all-purpose flour
¼ tsp salt
Filling:
16 oz cream cheese, softened
½ cup sugar
1 egg
1 tsp vanilla extract
1 tbsp lemon zest or juice (optional)
Topping:
1½ cups blueberries (fresh or frozen) or
1 cup blueberry preserves
Preheat oven to 350°F. Line a 9×13 pan with parchment.
Mix crust ingredients until crumbly. Press into pan and bake 15–18 mins.
Beat cream cheese and sugar. Add egg, vanilla, and lemon zest.
Pour filling over crust. Top with blueberries or swirl in preserves.
Bake 25–30 mins. Cool completely, then refrigerate 3 hours before slicing.
Use room temp cream cheese for a smooth filling. These bars freeze well and are best served chilled.
