Blueberry Cream Cheese Bars are rich, creamy, and bursting with sweet-tart blueberry flavor. With a buttery shortbread crust and smooth cheesecake filling, they’re the perfect easy dessert for any occasion.

Ingredients

Crust:

  • 1 cup (2 sticks) unsalted butter, softened

  • ½ cup sugar

  • 2 cups all-purpose flour

  • ¼ tsp salt

Filling:

  • 16 oz cream cheese, softened

  • ½ cup sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tbsp lemon zest or juice (optional)

Topping:

  • 1½ cups blueberries (fresh or frozen) or

  • 1 cup blueberry preserves

Instructions

  • Preheat oven to 350°F. Line a 9×13 pan with parchment.

  • Mix crust ingredients until crumbly. Press into pan and bake 15–18 mins.

  • Beat cream cheese and sugar. Add egg, vanilla, and lemon zest.

  • Pour filling over crust. Top with blueberries or swirl in preserves.

  • Bake 25–30 mins. Cool completely, then refrigerate 3 hours before slicing.

Notes

Use room temp cream cheese for a smooth filling. These bars freeze well and are best served chilled.
