A high-protein, fudgy single-serve brownie made in the microwave with cottage cheese and cocoa. Quick, healthy, and deeply satisfying.

Ingredients

  • ¼ cup cottage cheese

  • 1 egg

  • 2 tbsp maple syrup or honey

  • ½ tsp vanilla extract

  • 2 tbsp cocoa powder

  • 2 tbsp oat flour

  • ¼ tsp baking powder

  • Pinch of salt

  • Optional: chocolate chips, peanut butter, espresso powder

Instructions

  • Blend cottage cheese, egg, syrup, and vanilla until smooth.

  • Add cocoa, oat flour, baking powder, and salt. Stir or blend to combine.

  • Pour into greased mug or ramekin. Top with chocolate chips if desired.

  • Microwave on high for 60–90 seconds. Let sit for 1–2 minutes.

  • Serve warm with toppings of choice.

Notes

For vegan version, use flax egg and dairy-free cottage cheese. Adjust sweetness to taste.
