A high-protein, fudgy single-serve brownie made in the microwave with cottage cheese and cocoa. Quick, healthy, and deeply satisfying.
¼ cup cottage cheese
1 egg
2 tbsp maple syrup or honey
½ tsp vanilla extract
2 tbsp cocoa powder
2 tbsp oat flour
¼ tsp baking powder
Pinch of salt
Optional: chocolate chips, peanut butter, espresso powder
Blend cottage cheese, egg, syrup, and vanilla until smooth.
Add cocoa, oat flour, baking powder, and salt. Stir or blend to combine.
Pour into greased mug or ramekin. Top with chocolate chips if desired.
Microwave on high for 60–90 seconds. Let sit for 1–2 minutes.
Serve warm with toppings of choice.
For vegan version, use flax egg and dairy-free cottage cheese. Adjust sweetness to taste.
