Pecan Snowball Cookies are tender, buttery cookies with toasted pecans and a soft, melt-in-your-mouth texture coated in powdered sugar.

Ingredients

1 cup unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans, toasted
3/4 cup powdered sugar (for coating)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Toast pecans.
  • Cream butter and sugar until light and fluffy.
  • Add vanilla extract.
  • Whisk flour and salt; mix into wet ingredients.
  • Fold in toasted pecans.
  • Scoop dough, roll into balls, place 2 inches apart.
  • Bake 12–15 minutes until edges set and lightly golden.
  • Roll warm cookies in powdered sugar, repeat after cooling for thicker coating.
  • Store in airtight container up to 5 days.

Notes

Add cinnamon, chocolate, or chill dough for better shape; roll twice in powdered sugar for a snowy finish.
