1 1/4 cups all-purpose flour
1 1/2 tsp baking powder
2 tbsp granulated sugar
1/4 tsp salt
1/2 cup whole milk
2 tbsp melted unsalted butter
1 large egg
1 tsp vanilla extract
Vegetable oil, for frying
Cinnamon Sugar Coating:
3/4 cup granulated sugar
2 tsp ground cinnamon
Mix cinnamon sugar and set aside.
In a bowl, whisk flour, baking powder, sugar, and salt.
In another bowl, combine milk, melted butter, egg, and vanilla.
Stir wet ingredients into dry until just combined.
Heat 2 inches of oil to 350°F in a deep pot.
Drop batter by tablespoon into oil, fry 2–3 minutes until golden.
Remove with slotted spoon and drain on paper towels.
Roll warm bites in cinnamon sugar to coat.
Fry in small batches to maintain oil temp. Serve fresh with optional chocolate or caramel dip.
