12 Medjool dates
¼ cup almond butter (or nut butter of choice)
¼ cup goat cheese (or cream cheese/tahini)
2 tbsp crushed pistachios or nuts
1 tsp honey (optional)
Flaky sea salt, zest, or spices for garnish
Slice dates lengthwise on one side and remove pits.
Fill each date with 1 tsp of chosen filling.
Sprinkle toppings over the filling.
Chill for 15–20 minutes (optional) for firmer texture.
