Ingredients

  • 1 cup Medjool dates, pitted

  • 3/4 cup raw almonds or walnuts

  • 3 tbsp unsweetened cocoa powder

  • 2 tbsp coconut oil or nut butter

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: shredded coconut, espresso powder, chia seeds

Instructions

  • Soak dates if needed, then drain and dry.

  • Pulse nuts in a food processor until finely ground.

  • Add dates, cocoa powder, coconut oil, vanilla, and salt. Blend until a sticky dough forms.

  • Roll into 1-inch balls.

  • Coat in desired toppings (coconut, cocoa, nuts).

  • Chill for 30 minutes and store in fridge or freezer.
