1 cup Medjool dates, pitted
3/4 cup raw almonds or walnuts
3 tbsp unsweetened cocoa powder
2 tbsp coconut oil or nut butter
1 tsp vanilla extract
Pinch of salt
Optional: shredded coconut, espresso powder, chia seeds
Soak dates if needed, then drain and dry.
Pulse nuts in a food processor until finely ground.
Add dates, cocoa powder, coconut oil, vanilla, and salt. Blend until a sticky dough forms.
Roll into 1-inch balls.
Coat in desired toppings (coconut, cocoa, nuts).
Chill for 30 minutes and store in fridge or freezer.
