A bright citrus and chili marinade that coats chicken, seafood, steak, or vegetables with fresh flavor and gentle heat.
2 tablespoons fresh lime juice
1 teaspoon lime zest
3 tablespoons olive oil
2 cloves garlic, finely minced
1 teaspoon chili flakes
1 tablespoon honey
1 teaspoon salt
1 half teaspoon black pepper
2 tablespoons chopped fresh cilantro
In a medium bowl combine lime juice and lime zest.
Add olive oil, garlic, chili flakes, honey, salt, and black pepper.
Whisk until the mixture is glossy and well blended.
Stir in chopped cilantro.
Pour over protein or vegetables and coat evenly.
Refrigerate for 20 to 120 minutes depending on the ingredient.
Remove excess marinade and cook by grilling, roasting, or pan searing.
Adjust chili for desired heat level. Do not reuse marinade that has touched raw meat. Add fresh cilantro just before marinating for brightest flavor.
