Protein-packed, low-carb, and refreshing, High Protein Chicken Salad Cucumber Rolls combine chicken, Greek yogurt, vegetables, and herbs in crisp cucumber wraps.
2 cups cooked chicken breast, finely chopped
1/2 cup plain Greek yogurt
1/4 cup finely chopped celery
1/4 cup finely chopped red bell pepper
2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard (optional)
1 teaspoon lemon juice
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
1 large English cucumber, thinly sliced lengthwise
Optional: paprika for garnish
Chop cooked chicken breast finely.
Combine chicken with Greek yogurt in a medium bowl.
Stir in celery, red bell pepper, and parsley.
Add Dijon mustard, lemon juice, salt, and pepper; mix well.
Slice cucumber thinly lengthwise.
Spoon chicken salad onto one end of each cucumber slice.
Roll tightly and place seam-side down on a platter.
Optional: sprinkle paprika on top.
Chill 10–15 minutes before serving.
Assemble just before serving for best crispness. Use fresh chicken for optimal flavor.
