Ingredients

2 cups cooked chicken breast, finely chopped
1/2 cup plain Greek yogurt
1/4 cup finely chopped celery
1/4 cup finely chopped red bell pepper
2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard (optional)
1 teaspoon lemon juice
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
1 large English cucumber, thinly sliced lengthwise
Optional: paprika for garnish

Instructions

  • Chop cooked chicken breast finely.

  • Combine chicken with Greek yogurt in a medium bowl.

  • Stir in celery, red bell pepper, and parsley.

  • Add Dijon mustard, lemon juice, salt, and pepper; mix well.

  • Slice cucumber thinly lengthwise.

  • Spoon chicken salad onto one end of each cucumber slice.

  • Roll tightly and place seam-side down on a platter.

  • Optional: sprinkle paprika on top.

  • Chill 10–15 minutes before serving.

Notes
