French Onion Funeral Potatoes are a creamy, cheesy casserole with hash browns, French onion seasoning, and crispy fried onions, perfect for potlucks or holiday meals.

4 cups frozen shredded hash browns, thawed
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 packet (1 oz) French onion soup mix
1/4 cup unsalted butter, melted
1 1/2 cups French fried onions
1/2 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons chopped fresh parsley

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Combine hash browns, cream of mushroom soup, sour cream, cheddar, Parmesan, French onion soup mix, salt, and pepper in a large bowl.
  • Spread mixture evenly in the baking dish.
  • Mix melted butter with French fried onions and sprinkle over the casserole.
  • Bake uncovered for 45–50 minutes until bubbly and golden.
  • Let rest 5–10 minutes, garnish with parsley, and serve warm.

Notes

Can add ham or bacon for extra protein. Gluten-free substitutions are possible. Can be prepared ahead of time.
