1 pound cooked chicken breast shredded, 1/3 cup buffalo sauce, 2 flatbreads (8–10 inch), 1 1/2 cups shredded mozzarella, 1/4 cup shredded cheddar (optional), 1/4 cup red onion sliced, 1/4 cup celery sliced, 2 tbsp blue cheese crumbles (optional), 2 tbsp ranch or blue cheese dressing, optional jalapeños or green onions
1. Preheat oven to 425°F. 2. Toss chicken in buffalo sauce. 3. Spread on flatbread. 4. Top with cheeses, onion, celery, and optional toppings. 5. Bake 10–12 minutes until cheese melts and edges crisp. 6. Drizzle dressing and serve.
Assemble just before baking for best crispness. Adjust buffalo sauce for desired heat.
