Refreshing, crisp, and easy to make, Carrot & Cucumber Salad combines carrots, cucumber, fresh herbs, and a light dressing for a vibrant side dish.
2 medium carrots, peeled and julienned
1 large English cucumber, thinly sliced or julienned
2 tablespoons fresh parsley or cilantro, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon honey or maple syrup
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
Optional: 1 teaspoon toasted sesame seeds or sunflower seeds
Optional: pinch of paprika or chili flakes
Peel and julienne carrots.
Slice or julienne cucumber to match carrot strips.
Combine vegetables and chopped herbs in a bowl.
Whisk olive oil, lemon juice, honey, salt, and pepper; pour over vegetables.
Toss gently to coat evenly.
Optional: sprinkle seeds or paprika.
Chill 10–15 minutes before serving.
Best served fresh to retain crispness. Adjust sweetener and spices to taste.
