Refreshing carrot and apple salad with nuts, raisins, and a tangy lemon-vinegar dressing. Crisp, sweet, and colorful.

Ingredients

2 cups shredded carrots
2 medium apples, cored and julienned
1/4 cup chopped walnuts or almonds (optional)
1/4 cup raisins or dried cranberries (optional)
2 tablespoons fresh lemon juice
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup (optional)
1/4 teaspoon ground cinnamon (optional)
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley or mint (optional

Instructions

  • Shred carrots and julienne apples. Toss apples with lemon juice if desired.
  • Combine carrots, apples, nuts, and dried fruit in a large bowl.
  • Whisk together lemon juice, vinegar, honey/maple syrup, cinnamon, salt, and pepper.
  • Pour dressing over salad and toss gently. Let sit 5–10 minutes.
  • Garnish with parsley or mint and serve chilled or at room temperature.

Notes

Substitute other fruits or add vegetables like cabbage or celery for variation. Toast nuts for extra flavor.
