Bite-sized appetizer with creamy guacamole and spicy Cajun shrimp in crisp mini cups. Perfect for parties.

1/2 pound medium shrimp peeled and deveined, 1 tsp Cajun seasoning, 2 tsp olive oil, 2 ripe avocados, 1 small lime juiced, 1/4 tsp salt, 1/4 tsp black pepper, 1/4 tsp cumin, 1 small tomato diced, 2 tbsp red onion diced, 1 clove garlic minced, 2 tbsp fresh cilantro chopped, 12 mini phyllo or tortilla cups, 1/4 tsp smoked paprika (optional)

Instructions

1. Toss shrimp with Cajun seasoning and olive oil. 2. Cook shrimp 2–3 minutes per side until opaque. 3. Mash avocados with lime, salt, pepper, and cumin. 4. Fold in tomato, onion, garlic, and cilantro. 5. Bake cups until crisp. 6. Fill cups with guacamole. 7. Top with shrimp and sprinkle paprika if desired. 8. Serve immediately.

Notes

Prepare guacamole and shrimp separately; assemble just before serving. Avoid overcooking shrimp and overfilling cups.
