Broccoli Cheese Bites are baked, bite-sized snacks made with finely chopped broccoli, cheddar cheese, eggs, and breadcrumbs. They are golden on the outside and tender on the inside, perfect as an appetizer or side dish.
2 cups finely chopped broccoli florets
1 cup shredded cheddar cheese
2 large eggs
1/2 cup breadcrumbs
2 tablespoons finely diced onion
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or parchment paper
Preheat oven to 375°F and prepare a baking sheet.
Steam broccoli for 2 to 3 minutes, cool, drain, and chop finely.
In a bowl, combine broccoli, cheddar, breadcrumbs, and onion.
Add beaten eggs, garlic powder, salt, and pepper. Mix well.
Form mixture into small balls or patties and place on baking sheet.
Bake for 18 to 22 minutes until golden and firm.
Cool for 5 minutes before serving.
Drain broccoli thoroughly to prevent excess moisture. Reheat in oven or air fryer for best texture. Gluten-free breadcrumbs can be substituted if needed.
