2 large English cucumbers, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1/4 cup fresh parsley, chopped
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
Salt and black pepper, to taste
Optional: 1/2 red onion, thinly sliced
Optional: 1 cup cherry tomatoes, halved
Optional: 1/2 cup crumbled feta cheese
Slice cucumbers and bell peppers thinly. Prepare optional vegetables.
Chop parsley and combine with vegetables in a large bowl.
Whisk olive oil, lemon juice, garlic, salt, and black pepper for dressing.
