½ cup unsalted butter, softened
½ cup creamy peanut butter
½ cup granulated sugar (plus more for rolling)
½ cup brown sugar
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
¼ tsp salt
~30 milk chocolate kisses, unwrapped
Preheat oven to 350°F and line baking sheets with parchment.
Cream butter, peanut butter, and sugars until light and fluffy.
Add egg and vanilla; mix well.
Whisk dry ingredients separately, then mix into the wet mixture.
Roll dough into 1-inch balls and coat in granulated sugar.
Place on baking sheets and bake for 8–10 minutes.
Press a chocolate kiss into each cookie immediately after baking.
