4 cups fresh arugula, 2 ripe pears sliced, 1/4 cup toasted walnuts, 2 tbsp crumbled feta or goat cheese (optional), 2 tbsp olive oil, 1 tbsp honey, 1 tbsp apple cider vinegar or lemon juice, 1 tsp Dijon mustard, 1/4 tsp salt, 1/4 tsp black pepper
1. Slice pears and arrange with arugula. 2. Toast walnuts in skillet until fragrant. 3. Whisk olive oil, honey, vinegar, mustard, salt, and pepper. 4. Toss arugula with dressing. 5. Add pears and walnuts, gently mix. 6. Sprinkle cheese if desired. 7. Serve immediately.
Dress just before serving to maintain crispness. Use firm, ripe pears for best texture.
