Air fryer churro bites made healthy with Greek yogurt and whole wheat flour — crisp outside, fluffy inside, and coated in cinnamon coconut sugar.
Dough:
1 cup whole wheat or all-purpose flour
1 tsp baking powder
Pinch of salt
¾ cup plain Greek yogurt
1 tbsp coconut oil or unsalted butter, melted
Optional: 1 egg, 1 tsp vanilla
Coating:
3 tbsp coconut sugar
1 tsp cinnamon
Coconut oil spray or melted butter
Mix flour, baking powder, and salt. Add yogurt, coconut oil, and vanilla (if using).
Mix into a soft dough. Roll to ½-inch thickness and cut into small pieces.
Roll into balls and place in preheated air fryer at 350°F for 6–8 minutes.
While warm, spray lightly with oil and toss in cinnamon-sugar mix.
Best served warm. Store in an airtight container for 1–2 days. Add protein powder for post-workout fuel or swap flour for gluten-free blend.
